Yummy Eats: Optimal You Pumpkin Squares

PUMPKIN SQUARES

 

1/2 Cup Organic Butter

2 Cups Pumpkin

1 cup Maple Syrup

3 Eggs

1/2 tsp vanilla

25 drops of liquid stevia

1 cup spelt flour

2 tsp cinnamon

1 tsp dried ginger

1/2 tsp clove powder

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp sea salt

 

Melt Butter in a stove-top pot. In a medium sized bowl, mix pumpkin and maple syrup. Beat in eggs, vanilla & stevia. Sift in all the dry ingredients, and stir until well-blended. Put into a lightly buttered 9x13 glass pan. Bake in a preheated 350F oven for 30 mins. Serve warm or cold with organic whipped cream.
